Performance and selection

Approximately 5 to 6 kg of olives to obtain 1 liter of our oil, depending on the yield of the harvest.

The ratio varies in each campaign. The performance is not strong: it is observed and it is decided which lot is up to.

It has more character than a Arbequina, but we seek that intensity, bitterness and pungency remain balanced.

Why can it sting?

The pungency is a natural sensation that can be part of the profile of an extra virgin. In Picual it is usually more perceptible.

Can it be used for cooking?

Yes. It works both raw and in cooking, especially when you want the oil to have presence.

How to keep the OVE correctly?
